If you're looking for ways to eat healthier by reducing saturated fat and going dairy-free then cashew cream sauce is the answer for you! This version with garlic is a bit tart and spicy and perfect for a rich creamy pasta sauce, but if you're not into that, just skip the clove and go with the rest. A high speed blender works best for short soak time but if it isn't in your kitchen, just soak them for a few hours and it will be just as dreamy. Practicing penmanship and kitchen creativity, I co-authored my first recipe, “Ham Slam”, with one of my older siblings. It had all the makings of a classic 1960’s American kitchen treasure, featuring gourmet ingredients like Campbell’s cream of celery soup and Durkee’s canned French Fried onion rings. It’s no wonder my culinary career promptly took a diversion until around the age of 40. But spending years as an executive in the business of marketing brands such as Apple, Microsoft, and Sony Pictures didn’t snuff out my lifelong passion for travel, food, and wine. I eventually found my way back to my culinary roots when I turned my attention to studying technique at Cordon Bleu Paris, exploring new foodie concepts around Europe and documenting them in words and pictures. I’ve been privileged to pen articles and columns in many publications, including the Food52, Huffington Post, msn.com, Zester Daily, Santa Ynez Valley Journal, Michigan BLUE Lakestyle Magazine, Olive Oil Times and Olive Oil Source, the world’s top-ranked olive oil-related websites. This cashew cream tastes almost like cool original Doritos. Make your own cashew cream instead of using store-bought mayo. It is so much tastier and healthier too. Ingredients 100g unsalted cashews 1/2 tsp onion powder 2 garlic cloves 1/2 tsp pink salt 100ml water 1 tbsp lemon juice 2 tbsp nutritional yeast 100g plain natural soy yoghurt Method Step 1 Soak the cashew nuts in hot water for 1 hour Step 2 Drain and rinse the cashew nuts and add them to a high-speed blender with 100ml of cold water, onion granules, garlic, nutritional yeast, lemon juice and salt. Step 3 Blend until very smooth. Place into a jar and mix in the yoghurt. Store in an airtight container in the fridge. This will keep for 4-5 days.

This recipe of vegan cashew cream cheese is creamy, flavorful, and nutritious. It’s good to spread on slices of bread and crackers for snacks. Prep Time 1 hour | Cook Time 5 minutes | Total Time 1 hour 5 minutes | 4 Servings Ingredients: • 80g plain cashew nuts, soaked in hot water for at least an hour (or overnight if you don’t have a high-powered blender) (🤍 • 1 tbsp lemon juice • 1 garlic • 1 tbsp olive oil • 1/2 tsp apple cider vinegar • Pinch of dried rosemary • Sea salt, to taste (🤍 Instructions: 1. Drain the cashews and add into a high-powered blender along with the oil, garlic, lemon juice, apple cider vinegar and salt. Blend for around 1 minute in a high powered blender, or around 3-5 minutes (or longer if needed) in a lower power unit, until it has formed a smooth, thick paste that resembles cream cheese. If it is too thick, then add a little warm water. 2. Transfer to a small dish and sprinkle over the dried rosemary. Use as a substitute to cream cheese in any dish! Store in an airtight pot in the fridge for up to three days. What's going on everyone! Today I have something different for you all, a super quick, creamy cashew VEGAN pasta - this tastes AMAZING. The pasta and toppings - 3 servings of pasta (pre-cook this for 10 minutes in salted boiling water) - Keep half a cup of starchy water from the cooked pasta to the side - Handful of chopped basil - Half a chopped onion - Handful of chopped spinach - 1 cup of frozen/thawed garden peas The sauce - 1 cup cashew nuts - 200ml non-dairy milk of your choice (dairy can be used if necessary) - 2 teaspoons salt - 2 teaspoons black pepper - Pinch of saffron - 1 red chilli - 2 cloves of garlic Chuck all of the above into a blender and blitz until it forms a smooth creamy paste - if your paste is too thick add some more non-dairy milk, if it's too runny add some more cashews! In a pan, sauté the chopped onions in some oil until golden brown. Add in the blended pasta sauce and simmer for 2 minutes (be wary, this thickens up real quick). Stir in the starch water to make your sauce more runny if necessary. Add in the cooked pasta and give it a solid mix. Take off the heat and add in the peas, spinach and basil. This is a major staple in my kitchen! So versatile. Base for dressings, sauces, add to soups, potatoes, you name it. It can chill out any spicy dish, add the best creaminess to tacos, perfect for soup and the best replacement for sour cream! This recipe is magical because this recipe alone is what helped me to finally ditch dairy from my diet and go fully 100% plant based/vegan. To this day, I will always have a squirt bottle with extra cashew cream in the fridge just in case I need to make a dressing, whip up some ranch or tzatziki, or last minute mac n cheese. All you need is a few ingredients and a blender! It’ll last for about 7 days in the refrigerator and is the best condiment to add to any meal prep. Have an allergy to cashews?? Ingredients: 1/2 cup cashews 2 cups water 220g cremini mushrooms 1 red onion 3 pieces garlic 2 pinches of salt pepper to taste 1 tsp + 2 tbsp chili oil (🤍 1/2lb fusilli 2 tbsp tomato paste 1/3 cup white wine 1/3 cup plantbased cheese few sprigs parsley Directions: 1. Blend the cashews and water in a high powered blender until liquified (soak the cashews overnight if you don't have a high powered blender). Set aside the cashew cream 2. Bring a pot of water to boil for the pasta 3. Slice the cremini mushrooms and dice the red onion. Finely chop the garlic 4. Heat up a sauté pan to medium heat. Add in the mushrooms and cook for a few minutes. Season with a pinch of salt and pepper to taste. Add 1 tsp chili oil and sauté for another couple of minutes. Set the mushrooms aside 5. Boil the fusilli (or pasta of choice) for 1min less to package instructions 6. Place the sauté pan back on medium heat. Add 2 tbsp chili oil followed by the red onions. Sauté for 3-4min. Add the garlic and sauté for another minute. Season with a pinch of salt and pepper to taste 7. Add the tomato paste and sauté for a couple of minutes. Add in the white wine. Stir and cook for a few minutes 8. When the pasta is done, save about 1/4 cup of pasta water. Strain out the pasta. Add the pasta water to the sauté pan along with half of the cashew cream 9. Give the pan a good stir. Add in the pasta and mushrooms. Stir and cook for another minute (beware not to overcook as the cream can thicken quite quickly) 10. Turn the heat off and add the plantbased cheese. Give the pan a stir 11.
